Geisha Risengrøt – Rice Porridge 800g
For 4 portions: Bring 400 ml of water to the boil, add a pinch of salt and 200ml rice. Leave to simmer on low heat until most of the water has evaporated, approximately 10 minutes. Slowly pour in 1 litre of milk. Leave to boil on very low heat until it has reached the desired thickness – approximately 45 minutes. Stay close and stir every now and then – burnt milk is not nice (but if it does catch – just make sure Not to scrape it loose – leave it there and serve the rest. No one will know.). Serve with salted butter, cinnamon and sugar. Remember to put a bowl out for Father Christmas on Christmas eve.
