Literally meaning cold bowl, this ‘soup’ is traditionally served as a dessert during the light summer months in Denmark (although we sell it year round due to the phenomenal demand by the ex pat Danes in the UK). Delicious, sweet and tangy it makes a delicious dessert – traditionally topped with biscuits – ‘Kammerjunkere’ – we like to add fresh berries too. The base of the soup is buttermilk, mixed with vanilla and lemon – ready to serve. Just pour into bowls and top with berries or biscuits – or serve in a jug and let people help themselves.
