Red lumpfish roe: The favourite swedish caviar! Gives a flavour & colour kick to sauces or serve it on crispbread with chopped onion and sourcream.
Serving suggestion: when serving Vasterbotten paj, make a Romsas - a tablespoon of red caviar mixed with creme faiche (add a dollop of yoghurt or milk if it is too thick). Mix well (but carefully, not to break the fish eggs) - and season. Serve as a cold sauce to the Vasterbotten quiche.
