ScandiKitchen skagenröra – seafood salad 200g is our own creamy seafood salad made with prawns and white fish with dill and a touch of lime. It is essentially the Swedish version of a prawn cocktail. It is quite 80s but oh-so-good. We love it dolloped in a baked potato, but the most traditional way of eating it is on toast, as a very fancy starter. Add a fresh squeeze of lemon and you’re golden. Skagenröra means “Skagen mix” and was created by the legendary Swedish chef Tore Wretman in the 1950’s. Legend has it that Tore Wretman was sailing in Skagen, Denmark and the only food he had brought with him was some prawns, dill, eggs and oil. He simply made a mayonnaise from the oil and eggs and mixed it with the prawns and dill. Whether the story is true or not, Skagenröra is still extremely popular today in restaurants throughout Sweden.
We love to eat Skagenröra as a topping on a hot, baked potato. Or why not make your very own Toast Skagen? Simply fry a couple of slices of bread in butter in a pan and top with the Skagenröra. Garnish with some fish roe and fresh dill.
