Few products are as versatile as spirit vinegar. It was known as early as the 1600s. It is used from everything from pickling herring to meringues, to chili sauce and sushi, but always always diluted.
How to dilute:
Spirit Vinegar 12%: Mix 1 part vinegar with 1 part water, for a 12% spirit vinegar.
Pickling Vinegar 6%: Mix 1 part vinegar to 3 parts water.
