Yellow peas, rich in fiber, protein and minerals. In Sweden they’re used to make pea soup, which used to be eaten by all Swedes every Thursday. For many Swedes, pea soup on Thursdays is still tradition. Preparation: Rinse and put beans in cold water. Leave to soak for at least 6 hours. Put in saucepan with lid in new water with a bit of salt and boil on low heat for about an hour.
