Cloudberry jam – the arctic gold as they call it. It looks like golden raspberries, but taste much sweeter with a slight tart note. It is brilliant in desserts, warm it up and serve with ice cream – or on waffles or pancakes for a luxorious twist. It is great in baking and dessert making: cloudberry pannacotta, cheesecake or sorbet can be absolutely spectacular. We also love it with our own vasterbotten cheese if you are after a savoury option. Cloudberries are almost impossible to cultivate making foraging the only viable option. The berries grow up in the arctic swamps so not all that easy to find – but when you do it is like you’ve struck gold…
A Scandinavian jam regarded a delicacy – a golden, tart berry similar to physalis and raspberry in flavour but really – a flavour like nothing else.
