They only buy exceptionally fresh and fully trimmed salmon to be able to guarantee minimal wastage, salmon that lasts for longer and is a microbial superior product. The salmon is cooled and cut up within 6 hours from the point of the catch and they buy the salmon with the skin left on to ensure that the fish is well and healthy. It is a great flavour addition to fresh or smoked salmon in a rillette or, why not heat it gently and serve with boiled new potatoes and clarified butter.
