One of the most popular Swedish cheeses, Prastost was traditionally made by the churches and monasteries, but is nowadays made in factories. The name means priest cheese – but is just a nod to its origins. The cheese is rich and full-flavoured, with a good bite to it. Good on the cheese platter or as the star of an open sandwich.
